There’s More to Potato than Fries

Potatoes may be known as food of the hard up but its nutritive values can most certainly make any poor man rich - in health that is.

Freshly harvested, it contains about 80 percent water and 20 percent dry matter. About 60 to 80 percent of the dry matter is starch. On a dry weight basis, the protein content of potato is similar to that of cereals and is very high compared with other roots and tubers.

“Potatoes are rich in several micronutrients, especially vitamin C - eaten with its skin, a single medium-sized potato of 150 grams provides nearly half the daily adult requirement (100 milligrams),” says the United Nations Food and Agriculture Organization (FAO).

Potato as Rice Supplement

Given the rising cost of rice, wheat and corn, the lowly potato is gaining worldwide attention that could help address the food crisis prevailing in many countries, including the Philippines.

The long lines of people queuing at various NFA outlets is proof of the severity of the food problem, and this calls for remedial measures before the situation gets worse.

Many agree that maybe it’s time for rice-eating Filipinos to start rethinking their eating habits to adjust to this kind of situation by looking at alternative food items like potato which is readily available locally.
