Chicken Relleno
This special Spanish treat can surely liven up your meals.
Chicken relleno or Stuffed chicken comes from the Spanish word “Rellenar” which means “to stuff. The chicken is stuffed with ground pork, vegetables, hard boiled egg, chorizo or ham, and then baked. Dressed chicken should weigh 1.4 kilograms to come up with a chicken relleno of 2.0 kilograms cooked weight. Cooking can be done in an oven or turbo at 160 °F for 1 1/2 hours.
One piece of Chicken relleno costs Php800.00). This is a good give away for special occasions like the coming Christmas season.
YOU WILL BE NEEDING
Meat materials
Chicken, whole dressed, cleaned 1.2-1.5 kgs (1 pc)
Materials:
Marinate deboned chicken in Soy sauce : (8-12 hrs)
Soy sauce 1/2 cup (112 gms)
Calamansi juice 1/4 cup (60 gms)
Ground black pepper 1 t (1.70 gms)
Vetsin (MSG) 1/4t (0.75 gms)
Filling:(good for 1.2-1.5 kg.)
Pork lean, ground, finely 500 gms
Salt 1/2 T (6 gms)
Sugar, refined 4T (40 gms)
Ground black pepper 1t (1.70 gms)
Vetsin (MSG) 1/4t (0.75 gms)
Chorizo de bilbao, cubed 1/2 cup / 1 pc. (35 gms)
Potato cubed, sauteed 1/2 cup (2 pcs)
Red bell pepper, cubed 2T (2 pcs) 16 gms
Green peas 1/2 cup(1 can)
Raisins 4 T (2 boxes) 60 gms
Eggs boiled medium 2 pcs
Fresh garlic, chopped finely, sauteed 2 pcs. (12 gms)
Onion. chopped, sauteed 1/2 cup (73 gms)
Cheese, grated 1/2 cup (100 gms)
Pickle relish 2 T (32 gms)
Trimix* 2 T (14 gms)
*dissolve in 1/4 cup water
PROCEDURE
1. Marinate chicken overnight in the refrigerator.
2. Saute garlic, onion and potatoes till brown. Add ground pork, chorizo de bilbao and the rest of the ingredients.
3. Fill inside the deboned chicken,then sew the cut/open side. Wrap chicken in aluminum foil and tie.
4. Place the chicken inside the turbo broiler and cook for 2 hours at 350°F.
Sauce: Saute garlic and onion in butter, then add ground chicken liver, chicken broth knorr seasoning and MSG (vetsin). Dissolve flour in small amount of water and add to the chicken broth.Serve with sauce (extracted from the chicken when cooked in turbo, cornstarch ( 2 T, dissolve in 1/4 cup water) can be added to thicken sauce.
Note: Chicken relleno may be cooked in an oven at 350°F for one hour.
